Every day before service Gino would sit down with his coffee and cigarette and write the menu, hand it over to Janet who would then stand on the chair in the bar and hand write each dish on the black board. 

The idea was simple, a small menu means a good menu. 

A menu that could change whenever my dad felt it was time, felt inspired or wanted to try something new. 

Remembering our past has inspired our future.
